Supervise all activities in the kitchen, including food preparation and production, and management and training of kitchen staff.
Control and direct the food preparation process and any other relative activities.
Construct menus with new or existing culinary creations ensuring the variety and quality of the servings.
Ensure that all existing recipes are noted correctly in recipe guide book, and all staff should follow exact quantities to achieve constant taste in every serving.
Ensure efficient, cost-effective operation and profitability of food production.
Ensuring that all prepared foods are properly labeled with their expiration dates, temperature controls, and daily temperature readings for refrigerators.
Approve and “polish” dishes before they reach the customer.
Look for ways to reduce spoilage of infrequently used items.
Plan orders of equipment or ingredients according to identified shortages.
Supervise and inspect all preparation and cooking s on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order.
Ensure that food products, presentation, and plating are of the highest quality, and are prepared to serve in a timely manner.
Follow the instructions and recommendations from the immediate superiors to complete the daily tasks.
Ensure the highest standards and consistent quality in the daily preparation and keep up to date with the new products, recipes and preparation techniques.
Instruct and lead subordinates through their daily requirements in food preparation and actively take part in set up and supervising of buffets and special functions.
Ensure all equipment is in safe working order and notifying the Executive Chef of any dangerous or defective equipment.
Monitor holding and storage operations, stocking and food rotation, and guarantee food service sanitation standards are met.
Ensure the kitchen and refrigerators are maintained clean and that the stock in the refrigerators is properly rotated (FIFO).
Examine and asses the quality of the completed food products and the raw foods that were obtained.
Conduct a monthly inventory inspection to order accordingly and restock.
Maintain a professional and pleasant working relationship with all superiors and peers at all times.
Coordinate with Quality and Safety control department regarding training need analysis of staff and scheduling the training in a way that will not affect regular operations.
Manage staff disagreements, grievances and situations according to the company’s staff code of conduct, procedures and relevant policies.
Conduct interviews for new hires and seasonal staff.

Minimum of 7 years of experience in kitchen Management.
Italian cuisine experience is a must
